My weird relationship with summer and root beer vanilla bean ice cream

I live in a humid state. Fact. Yes, I know I live here by my own free will, but I am mainly here for family reasons. So when summer rolls around, well, it’s not my favorite time of year. I like long sleeves and boots. I also really like ice cream in the winter. But here is a recipe I came up with, and it tastes like a root beer float. So while I stay in the AC, you all enjoy your lakes, boats, and camping. I will watch Netflix and wait for fall 

Root Beer Vanilla Bean Ice Cream

1 cup whole milk

3/4 cup sugar

pinch of salt

2 cups heavy cream

2 bottles root beer

1 vanilla bean or 2 T vanilla extract

Whisk milk, sugar, and salt together until sugar is dissolved

If using an ice cream maker, add heavy cream to maker and start churning. Add root beer, vanilla bean (or extract) and milk mixture. Churn for 30 minutes or however long your maker suggests

If not using an ice cream maker, place all ingredients in a freezer safe bowl and freeze overnight. 



Clarity and blackberry ice cream

Clarity came come in many different ways. Like when your ice cream machine breaks while you are making ice cream, and you almost start to cry. Which makes you think about life, and how things break when you need them. And you realize that a second chance you gave someone was a dumb idea, and you fix it right away. And the heavy weight that was on your mind, heart, and shoulders is lifted, and you see clearly again. Those of us who make great decisions day in and out, sometimes get caught up in the sweet gestures, or right words, and we falter from our wall of protection, our steadfast control and quick decision making. But clarity comes, maybe not right away, but it always shows it’s face. And we beat ourselves up for making a short term bad decision, but we realize that life is made up of decisions, good and bad, and we hopefully learn from them and move on. 



Ice cream. I like it mostly in the winter, when it’s cold and dreary out. But I wanted to make blackberry ice cream, with it’s deep dark color, and not as often used flavor. Normally I make ice cream in my ice cream maker, but since it decided we were through, I ended up finishing it in the blender. Make some ice cream, soothe your soul, make some decisions, hard ones or easy ones, but something that will make you look back and think “that was the clarity I needed” 


Blackberry ice cream


2 cups frozen or fresh blackberries

1 cup sugar

2 tablespoons lemon juice

2 cups heavy cream

1 cup full fat sour cream


In a medium saucepan, stir blackberries, sugar, and lemon juice until berries become soft

Pour into blender and puree until smooth

Strain blackberry juice into a large bowl or container


*At this point if your ice cream machine loves you, pour heavy cream, sour cream, and blackberry juice into machine and mix for about 30 minutes. Freeze as instructed on your ice cream machine


*If you don’t have an ice cream machine, pour blackberry mixture, heavy cream, and sour cream into a blender, and blend until incorporated. Pour into freezer safe container and let set for a few hours or overnight.
